The most basic version is called "soba niku-tama" - that's cabbage topped with pork, egg and noodles. My wife's parents (who live in Nagano prefecture in central Honshu) dined at this okonomiyaki-ya when they visited Hiroshima 10 years ago...and recommended it to us. We weren't disappointed. The okonomiyaki we had was first rate. The restaurant opened in 1950 and the fact it is still around indicates our food experience was no fluke.
