Why Jiro Sushi is special ?

Right now, at Sukiyabashi Jiro they serve only the omakase tasting menu. Jiro Ono makes the sushi for all customers. The omakase tasting menu served at the counter is determined in the morning each day and served in order. It consists of about 20 sushi pieces. That is quite a large amount. However, Jiro Ono takes care to make each piece smaller for older woman customers. Please eat the sushi soon after it is placed on the plate in front of you. Its flavors are at their most exquisite when the sushi has just been prepared. Because "nikiri" soy sauce has already been brushed on the sushi, there is no need to dip it in a saucer of soy sauce.

First thing is that: yes, it was the best sushi I ever had. Second: I was served by Jiro´s son, Jiro himself was not there. Kind of disappointing. I had other great sushi in Tokyo without what one of the colleges below described (and I agree) as an “intense atmosphere to the point of being uncomfortable”. They server 18-19 sushi in a row non-stop without any interaction with the client. And if you leave your sushi sitting for just a little while, the chef doesn’t seem to be that happy about it. Yes, I get the idea of the “sushi perfection”, but you are at a 3 star restaurant and you have almost no time to delight yourself and make comments with your wife/friends about the meal. So if you love sushi, you should go. But make a lunch reservation. Spend dinner on a more relaxed atmosphere with sake! And before go take a look at his website for all the “dos and don´ts”.

I've been going to Jiro for the past 15years and yet this is the one sushi place that i always go back to. The attention to detail for all the ingredients is amazing, from the rice grain to the temperature of the sushi rice, the quality fish and seafood selections, the preparation, the cut of the fishes always satisfy my sushi cravings, The Tamago is a must try when ur at Jiro, i know u might think it's a simple tamago but at Jiro nothing is simple.
