Why Ay-Chung Flour-Rice Noodle(Ximending) is special ?
If you are ever hungry in Taipei, then one of the best places for a quick snack would be at Ay-Chung Flour Rice Noodle, located in Ximending district in Taipei, Taiwan. It is a deceptively simple noodle dish, but it tastes so good!
It is very easy to find this place, just look for the place with a huge line up and crowd of people eating noodles on Emei Street in the Ximending shopping district of Taipei. The dish itself is simply rice vermicelli in a rich starchy broth, with traces of pork meat, and some of the “nasty bits” of the pork…such as the pig’s stomach, and intestines. For me I have no problem eating the “nasty bits”, in fact I love eating them!
On top of that you have an abundance of condiments to enhance the flavours of your noodles. For me, I simply added some minced garlic, soy sauce, red vinegar, sesame oil, and some chilli oil. It tasted amazing. Furthermore one standard size bowl is only about 1.50 USD!
Ay-Chung's slurpingly smooth noodles are served in a sweet and sour broth flavored with salt cured intestines, skipjack tuna, and shredded bamboo shoots and garnished with cilantro, basil, pureed garlic, and a sprinkle of dark vinegar.

Traditional dish that is definitely worth the long line which is a tell-tale sign that it's a local favorite. The line moves fast because they only serve one dish but in two sizes. The price is definitely cheap for what you're getting. For those who have never had this dish before, the soup is a thicker consistency and the circular meat is intestine... But wait! Don't be put off by this!!! I typically try to avoid eating intestines in my other dishes but this is definitely a MUST TRY. It has a chewy and non-rubbery texture and the slightly spicy soup adds great flavor! Make sure to add chili, garlic, and vinegar to your liking at the small sauce area by the napkin dispensers!
